As a homebaker, I've always wondered if baking was just a hobby or if it was something MORE. I fancied working in a commercial kitchen, where the stations are made of stainless steel tops and the ovens are huge.

Ohh! the excitement I had working with unfamiliar pastries & ingredients! I wanted to be in a live class and be taught by professional chefs about different baking techniques. But was it too late to start to have a career change? As someone in their mid-30's, has two young kids, a job and in the middle of starting a business, taking up a course, on top of it all is not practical.

Thankfully, I found a school that fits our busy schedules and I have a husband who supports my dreams, though that would mean more time for him with the kids. I would go to class after my job, stand there for four hours (three for cooking/baking and the last hour for washing, drying the dishes, wiping and sanitizing the benches or sweeping, mopping and drying the floor).

I would go home at night super tired but with a happy heart too. It just felt so right! My class was more than just learning how to bake, it was a journey of self-discovery for me. Now I know that baking is my passion and I am confident to pursue it through my business. And NO, it is NEVER TOO LATE to dream a new dream. I was ready to try and fail than wonder for the rest of my life what could have been if I had just jumped and I'm glad I took that leap of faith.
